Patricia's San Diego Sunday Enchiladas Mornay
Hi this is my blog of family recipes, please feel free to post your own recipes in the comment section and I will re-post. Thank you! Now drum roll..........here is our first recipe courtesy of my grandmother.
Chicken Enchiladas Mornay
3 Cups of shredded cooked chicken salted and pepppered
1 small can of diced green chilis
12 tortillas
White Mornay Sauce Ingredients:
6 Tbls of Butter
6 tbls of flour
2 1/2 cups of milk
1/4 tsp white pepper or black
1 1/2 tsp of salt
1 cup of shredded swiss cheese
1/4 cup of parmesean
3/4 cup of sour cream
Directions:
1. Sprinkle chicken with salt and pepper cook at 375 degrees for 45 minutes, until juices run clear,
2. In a pan melt butter stir in flour to make paste and remove from heat. Add the milk and return to heat, stir until thick.
3. Mix one cup of sauce with chicken, add the chilis, and heat the tortillas in the microwave for 20 seconds to make them pliable.
4. Spoon chicken mixture and roll up, put in bottom of greased pan, place seam down.
5. Stir the sour cream and swiss cheese together into the sauce, heat until well blended.
8. Pour over the tortillas and sprinkle with parmesean cheese.
9. Bake at 350 degrees for 20 mintues until hot and bubbly..........Serve and Eat!
